Hi Kimmoffit,
You can sew around the head twice when sewing the head to the body, this helps making it less floppy. Also, you could choose to use a pipe cleaner that you insert from body to head to keep it stable. Do keep in mind to secure the ends by twisting them and wrapping with a bit of tape.

Another idea is to use felt. I had some left over, cut 4" x 4" square, rolled it up in a tube and inserted it as a "neck." Soft and safe for kids but still helps stabilize the heavy head.
